See here a report of J. Parisot on his travel to the Near East. A larger part of the report (from p. 326 of the pdf file (p. 280 of the printed edition) onwards) is taken up by his description of the music of the Oriental Churches. This contains a description of the scales, rhythm, modes and so on. There's also a large number of transcriptions given. There are also a few chants of the Melkite tradition given (no. 254-256), which I attach to this message.
